Il Pecorino Romano is a hard cheese exclusively produces with whole sheep’s milk.

The shape is cylindrical with flat faces and its rind is slight and with a light ivory color or natural straw yellow; the table type has an aromatic, slightly piquancy and sapid taste, whereas the grating one is piquancy.

It is traded with a cheese rack form 5 to 8 months.

Il Pecorino Romano, a sheep’s milk with a 2,000 year long story, was tasted on triclinium of Roman emperors and used to rejuvenate the legionaries, as told by Virgilio: «The daily portion of (Roman) pecorino for the Roman legionaries was an ounce, which had the function to reduce the fatigue».
The raw material of Pecorino Romano bases on an accurate selection of kettles that graze on the rich Agro Romano from October to June and in full respect of the natural cycle and needs of animals.

These very selected kettles guarantee the high organoleptic milk characteristics then worked and transformed.

Exactly as happened centuries ago, the pecorino’s salting is exclusively “dried”, that is manually salted with marine salt and it is not as happened in some places, brined with the immersion in a saline solution.

The perfectly balanced temperature and humidity allows pecorino to have a unique naturally delicate aftertaste.

Pecorino Romano is a highly energetic food thanks to some base nutrients which characterized it, such as the high presence of calcium, proteins and salt.


A really recent study carried out from Universities of Sassari and Cagliari has showed that pecorino has highly beneficial substances for human health.

Specifically the researchers have discovered that little quantities of Pecorino Romano help to protect from arteriosclerosis, moreover this cheese contains anti-inflammatory and anti-cancer properties, a high level of Omega-3 and CLA (a fat acid that has important anti-cancer effects) helpful in particular for the cardiovascular pathologies.
