RODEZ cheese is commercialized in an entire shape (about 2,5 Kg) or cut in packs of ½ shape (about 1.250 Kg), of ¼ shape (about 625 g) and 1/8 shape (about 300 g). Moreover, it is also available already grated in the new practical packing of 100 g with a zip to save the freshness.
The RODEZ cheese belongs to hard cheese but has particular characteristics making it unique.
The cows’ nutrition is based on local grass and pasture allowing the production of a milk associated to the ancestral “savoir-faire” of cheesemaker giving an equilibrate and lightly piquancy taste.
Ripened for at least 6 months, its particular consistency, allows to taste it both in flakes or grated.

To obtain a kg of RODEZ one needs 13 liters of prestigious milk from the origin area. A nutritive protein charge, vitamins, phosphor and calcium concentrate in the paste and remain during the ripening period.
